I work for a sales organization in NY. I get a salary and commision weekly. If I leave early one day can my employer add my total commission earned for the week with my salary and then use that total number to determine my hourly rate to deduct the time I was not at work?

In a nutshell, NO. If you are salaried, your employer cannot legally dock you on an hourly basis. It sounds as if there may be something underhanded going on.
