If I resigns, will I be able to still collect unemployment?

Unless your employer agrees in writing not to contest unemployment benefits as part of a negotiated severance agreement, you should assume that your resignation will result in your employer contesting your unemployment claim and you being denied UI benefits.

If you are still employed, I would urge you to speak with a severance attorney prior to resigning.
