To evict a husband and wife and their adult child (24), do I have to serve all 3 separately?

Most likely yes each with separate papers, but they can all be served at the same time. As New York State law is very specific as to the exact wording required in these Notices and the manner in which they must be served upon the tenant, it is highly advisable to retain the services of an attorney experienced in these areas. You have to be clearer when you write, "serve papers." What papers? The 3 day or 30 day notice or the Notice of Petition. This is why Mr. Czik's advice is not wholly correct. He is making assumptions about what paper you are to serve - which you have not set forth in your question. I would re-submit the question and be more specific.
