i live in ny state is it possible for my husband to take my name off deed with me knowing it

No, it is not possible to have your husband take your name off the deed without you knowing it. Both original parties (in this case, you and your husband) need to execute a new deed at the same time transferring the property to a new party. Unless your husband forges your signature, he could not take you off the deed.
