Legal Question in Real Estate Law in New York

My fiance got his brother a job a couple years ago.. where my fiance works.. the company is very much like family.. we have known them for about 10 years.. well my finaces brother asked his boss to cosign a loan for a mobile home.. His boss agreed who is my fiance's boss also.. he agreed under the terms he had a legal contract drawn up by his lawyer for this person to sighn agreeing if he missed 3 payments on the home or lot rent he was to hand over the deed to mobile home and vacate premises within 30 days no questions asked.. Well he is over 6 months behind on lot rent and the home payment.. He also took off to a different state and is trying to sell the mobile home and keep the cash.. After he signed a legal document.. saying he would hand over all the paperwork.. now he is claiming he cant read.. so the document he sighned isnt legal.. Now my finace's boss has people willing to take over on this mobile home and pay all the back rent.. What can he do to legally get the title.. and or put these people in jail for selling stolen property.. ? And Can he do that?
