Do accounts that have beneficiaries named need to be included in a Last Will and Testament in New York?
Does the Will override the beneficiary? Or does the beneficiary stand on it's own?

No. The bank account would not be part of the estate.

The will does not override a beneficiary designation. Don't forget though it's always possible for the beneficiary to die before the account owner, so you need to consider that when making out the will, just in case.
