Legal Question in Wills and Trusts in New York
I have a will which leaves everything to my children and in addition an amount of cash to my grandchildren. Now that they are teen-agers I would like to add that they must be 21 yrs. of age when they are more responsible. Can I simply type up this small change and have it witnessed and know that it is legal?

What you want to do is add a "codicil" to the will. This is basically an addition or amendment.
A codicil must be signed in the same manner as a will. For more information as to how to execute a will, see: NY EPTL 3-2.1.
