If my Last Will reads that everything I own goes to my spouse. Does that give my spouse rights to all assets, including those assigned to another beneficiary?

No, only those in your name alone with no beneficiary designated.

Any accounts with a beneficiary who survives you will be unaffected by your Will. Thus, the funds in those accounts will go to the beneficiary regardless of what you say in your Will.
