Can I claim against a previous owner if I find structural damage to the house subsequent to the sale being made

The only way that you could be successful is if the previous owner could have known about the defects. If you had then asked whether there were any structural defects and they said No, then they misled you.
Otherwise, the law on this is that generally you buy at your own risk. For instance, if you did not get a building insepction done before the purchase went unconditional, then that is your own bad luck.
