If I want to have a case dismissed as a plaintiff and possibly before the court date, what’s the best way to go about this?

What you want is not relevant - it's what you can do that matters. If the Defendant has not filed an Answer, you can typically just prepare and file a Notice of Dismissal. If the Defendant has filed an Answer, it is too late and now youse can't dismiss - at least not unilaterally.
