What protections am i offered in a criminal trial if i protected myself in my home with deadly force?

If you are charged with a crime that could carry jail time if convicted you, will be offered a court appointed attorney or public defender if you are indigent - if you consider that a 'protection' otherwise you are on your own. Welcome to hillbilly North Carolina!

What protections am i offered by NC castle doctrine?

None - there is no such thing as 'castle doctrine'. If you mean 'case law' - still none, as case law provides precedent not protection..

Will i have to prove the intent of the intruder?

No. The state has the burden of 'proof'.
