if you have an agreement with someone over text and they delete their copy will that stand in court as an agreement still ?

The question you asked makes no sense - if they delete their copy there would be nothing to "stand in Court' and you can not very well use nothing to prove an agreement. Are you asking if your copy can be used if they delete their copy? If so the answer is possibly. You would need to be able to show the text forms a binding contract and that would be difficult. You would need to show all the elements of a contract exist - for example, a meeting of the minds and an offer and acceptance etc. You would also need to be contracting over something that doesn't require a specific form of contract - for example some real estate contracts are required to be in writing. Finally, if the other person involved has even half a brain about them, they will simply deny sending the text and you will likely have a huge proof problem proving it was actually them that agreed with you by text in the first place.
