if someone is in the middle of the adoption and the parents do not contest it can the grandparent take that child away

By what authority? Unless the grandparents are intervening in the adoption proceedings, I don't see how they have any authority to take the child. If the grandparents intervene, there has to be some basis and the grandparents are going to need an attorney to maximize their chances for recovery.

I also question how is it now that the grandparents have decided to get involved now. Did they not know about this beforehand? How did the adoption take place? Was there DSS involvement or did the parents decide that they could no longer care for their children? If the latter, what is it that makes the parents want to go outside the family? If DSS was involved, why did DSS choose other parents rather than the grandparents? Are the grandparents suitable?

The answers to these questions will affect whether the grandparents can intervene or not.
