Legal Question in Family Law in North Carolina

My wife has moved to her parents basement and we share the responsibilities of our children evenly, but there is no legal seperation, etc . . . I would like to travel with my children for 7 days to visit my family for Thanksgiving. Regardless of what my "wife" thinks, are there any laws prohibiting me from doing this?

You need to have a frank discussion with your estranged spouse. If you leave the state for a long period of time without discussing it, it could be seen as you fleeing with them, which is bad. If the relationship is still good enough for you two to talk, you need to discuss the custody/visitation arrangement now.
