If you have documentation that an employee tells another employee that she is not coming to work on a particular day and then calls out on that day but then brings a note from a doctor, can the employer still write her up because of the other employee's statement?

An employer may write this employee up. What it means depends....in a termination, employers can terminate for any reason other than discrimination. As far as unemployment, this probably will not hold much water, but we need more facts.

You inquiry just stated that and employee said she would be out...then produced a doctor's note. I assume you are inferring that the employee was bragging that she would fake to get out of work. With a seemingly legitimate doctor's note, the other employee's statement will be weakened.
