Is there a limit to how much a person can sue you if your auto insurance policy exceeds the limits? For example the only injury sustained was to the wrist and it has healed properly? If so how much and what kind of payment terms due there have to be?

As is the case many times under the law, there is not necessarily a clear answer. Cases like this cases be very fact specific and further information may be helpful.

I'm not sure I fully understand your question, but a person can recover up to their full damages, or the limit on the insurance policy(s), which ever is greater. Further, it is possible, but difficult, to pursue personal assets in excess of of insurance limits if the damages are greater.
