can your stock be taken if you owe money to a creditor

Yes. Any asset can be taken with the exception of any ownership in LLC's. As such, should this stock be of your own company, or a local company, you'd be better off starting an LLC in lieu of an S Corp or C Corp.

Yes, if the creditor is made aware of it through a debtors exam. The creditor can then attempt to attach said assets.
