Can prosecutors in criminal trial prosecute you for anything other than the reason you were originally going to court?

Yes if, during the investigation, they found additional evidence of another crime being committed. But the prosecutor needs to amend the complaint to add the new charges and then you must get reasonable time to formulate a defense.
