If we have a prenuptal agreement keeping finances seperate and one of us ends up in a nursing home would the home be allowed to touch the other spouse's money?

No, as long as the funds stay separate, as nonmarital assets, they would not be considered part of the individual's estate to be used for nursing home purposes.
