If someone files for divorce and the other party is being served through the mail the papers and they don't pick them up at the post office and there's a court date set for hearing is that date null and void for the hearing? Does the court then go out to serve the person or does the action start over? no children involved

If the opposing party has not been properly served and noticed by the time of the hearing, the court will probably continue it to a later date. If certified is left unclaimed, it is up to you or your counsel to have the papers served by regular mail. As long as those papers don't come back, service is deemed complete.
