Legal Question in Business Law in Oklahoma

i cook for a food service, multiple health code violations occur by managment after reporting to owner no action was taken i quit after managment was going to serve turkey at room temp for seven hours i contacted the health dept. and the buisness we catered to. now i have a cease and desist letter delivered to me wanting me to retrack the email (witch i have photos to support all my aligations.) and they want me to apologize to the customer and tell them i lied or they r going to sue me for monerary damages and attorney fees, what do you think about this

This appears to be wrong based on the facts you have presented. Who sent you the cease and desist letter? If it is the employer, call the Health Department personnel you talked to and find out what happened.

To protect your job, call Mark Hammons law office. They do employment law. You may also contact Oklahoma Bar Association and ask for an employment lawyer (plaintiff's). They will give you 2 or 3 names.
