Is there any legal action that I can take against a process server who lied about serving me court papers informing me of a court date??

You may want to retrieve a copy of the "Rules of Civil Procedures" by requesting a copy from the Oklahoma County Courthouse. This document will outline your legal rights in contrast to the responsibilities of the process server.
In the meantime, "Proof of Service" is required by a process server. This is in spite of the letter he/she submitted stated that you had been properly and legally served. Additionally, they are not cannot allowed to serve anyone under the age of 18 years of age. This is just a few of the many requirements that must be met by the Defendant and Plaintiff. If you, as the Defendant, were not properly served, you were not allowed "Due Process of Law" because you were denied the opportunity to respond...usually 20 days from the date of service.
