Is it possible to appoint more than one person as my Power of Attorney?

Yes it can be done in the same document which should be carefully drafted to address your puposes. Knowing what your specific concerns are could help an attorney draft a power of attorney to address the issue. I would suggest you rephrase your question now as to what specifically you are concerned about. The law in Oklahoma may have already provided for your particular issue, ie. health care issues, disposition of your property upon death, guardianship in case of incapacity, etc.

Yes, it is possible to appoint "Co" Power of Attorneys, but the parties Must agree to act jointly on your behalf, otherwise it usually doesn't work. It is better to appoint Successor persons with Power of Attorney; with your reccommendation and articulated hope that they discuss things with each other, as may be necessary, concerning your health, care or wellbeing.
