Do I need a signed contract from participants in order to videotape and interview them, if I plan on posting the interviews online?

If they're in public you should be able to video them. You should tell them what you're doing and what your intentions are, and make it clear they do not have to be interviewed; then, don't post what they've said in a false light (eg, editing, taking things out of context).
