Can we type up a Will and notarize it ourselves, or does it need to be an official legal document?

No. It "needs to be a legal document." Simple Wills are not expensive. If you do not have an attorney, many will do a Will for $75-100 as a sort of incentive that you continue to use them in the future when the need arises. Check around with some attorneys for a fee quote. A Simple Will is like if I die everything goes to my wife, if she dies everything goes to me. If we both time at the same time and have minor children it will go to so-and-so in trust for the minor children. There are formalities to a proper "legal" Will which you do not want to mess up. Whats the use of doing one that isnt going to hold up.
