Can I sue a hotel chain for violating the Americans with Disabilities Act for not allowing my service dog to enter?

It is unlawful for a hotel not to make reasonable accommodations that denies access to a person with a disability. Whether or not you were discriminated against cannot be determined based sole on your question.
