How do you remove a name/person that is incorrectly placed and not connected to business or owners on small claims court papers?

Anyone can sue anyone at anytime for anything. The purpose of the process is to resolve the allegations.

Presumably, when a party names another party, they intended to do so. In that event, as with any other allegation, the party’s only recourse is to settle or defend.

If the Plaintiff simply made a mistake, that can usually be resolved by contacting counsel and pointing out the mistake.
