custody laws for unmarried parents
I am a parent of a 3yr old child. My ex and I were never married. There is no court order for child custody, but I have been my sons caretaker since he was born. My ex has only seen our son a couple of times and now wants me to let him take our son for a couple of hours, but I dont trust him and our son dosent even know him. Is there any laws stating that I have to let him take our son or have visitations?

You need to file for custody immediately. Express to him that you would be more comfortable with supervised visitation to start leading to more visitation and perhaps even partial physical custody. Right now without an order it parent with the child wins. However, if you left the child with your mother and he showed up with the police and you were not there, the police could take the child (Unlikely but possible) and give to him.
