spouse wants life insurance policy for the children in case the father dies prematurely. she wants to be the beneficiary on the policy to control how the children spend the money. is there a way to avoid her being named the beneficiary or put restrictions on how they spend the money?

Re: divorce involving minor children

Divorce agreements can contain anything the parties agree to. However, such restrictions are not common. Rather, agreements usually simply provide for the life insurance and the beneficiaries handle the proceeds anyway they deem fit. It is their property.
