If you have a civil lawsuit judgement against you, can the company with the judgement turn it over to the sherriffs office for collection? And if they can what can the sherriffs office sell to make good on the judgement?

Yes. The sheriff can levy on your personal and real property if arrangements are not made. The creditor does not turn it over for collection. The sheriff is not a debt collector. He is just doing his job, part of which includes holding sales of your property to satisfy the judgment. Cars and homes that are secured by mortgages/loans usually are not taken. You can keep $300 in your bank account, but no more unless your income is exempt, like social security income. You can keep your clothes, a sewing machine and a Bible.
You have not told me how much the judgment is for, whether it is for a credit card debt or other matter or what assets you have so I can only give general advice. Feel free to contact me to discuss these matters or if you wish to work out arrangements with the creditor so they will not levy on your property. Otherwise, if you have a lot of debts and your property is at risk, you might want to consider bankruptcy.
