can a salaried manager work a bartending shift and keep his tips?

You asked if a salaried manager should keep tips when working a service position.

Yes. The tip is from patron to the server for the service. BUT, if a bartender is filling in while the regular server is occupied, smoke break, bathroom, etc. then the tip should go to the regular server.

But as to your actual question then bartenders should do with their tips as is customary.
