Why would my company require us to sign a document stating that we would not sue them and what would be there reason?

You asked about a waiver that many companies require of terminated workers.
Companies believe these agreements protect them from any claims of wrongful discharge, discrimination, and other suits and claims that they deem vexatious. They are wrong.
In many cases these agreements can be destroyed in any number of circumstances. It is important for any employee to discuss the conditions of a termination with an attorney if there is any question about the issues of a termination. If the employer refuses to allow the employee any time or opportunity to consult with an attorney then the agreement is essentially unenforceable.
