What type of notice does a tenant at will have when it comes to being asked to vacate a rental unit? Does it matter if it is winter?

you have to give them a notice to quit. Which tells them if they don't leave in X days then you will file for possession with the DJ.

Yes winter makes a difference in how fast the DJ will make them move.
