Can I use my POA to put my name on a deed to my mothers home since she is incapasatated?

As your mother's agent you have a fiduciary duty to her. A POA is a document that makes the person name the agent of the person signing the POA.
What you're going to be doing is executing a new deed. From you mom to your mom and you. Not a good idea. It gives the appearance you violated your fiduciary duty. Besides if you were to inherit the house you'd get a better tax break.
