my husband and I are both traveling out of the country and leaving the kids behind with my parents, what type of POA should I do,just in case something happens to us.

Why not just do a will with guardianship provisions? Simple reciprocal wills with guardianship provisions are fairly quick and inexpensive to draft. I can do it by e-mail if you'd like....
