Just because you blow high doesn't necessarily mean that you will be convicted. If the case went to trial, they would be required to prove that not only your blood alcohol level was over the legal limit, but that your driving was impaired as a result. Often there are procedual mistakes that the state or police makes that enables a lawyer to either get it dismissed or reduced to a lessor charge such as careless operation or reckless driving.
