How do I order that my ex husband pay support through the court system, and not by mail?

Unless the Court Order specifies a procedure to have him pay through the Court, there is no way to automatically make that happen. Frequently, the Order will say that he can pay you directly, but if he is ever more than five days late with a payment, you can file an Affidavit to that effect with the Court and he will then have to make all future payments through the Court.
If that provision is not there and so long as he pays in a timely manner, there is no way to force him to pay through the Court. If he has fallen behind on payments, you can bring a contempt action against him and the Court will probably require future payments be made through the Court as one of its remedies.
