Marital Separartion

My husband and I are separated. Can he add my name to a mortgage without my consent?s

If by "add your name" you mean either (a) take out a new mortgage or (b) refinance an existing mortgage, then the answer is probably not -- as your signature would be required for either. However, it is for reasons such as these that you should act to protect your interests instead of waiting and hoping that your spouse doesn't do anything to cause problems for you.
