Legal Question in Intellectual Property in South Carolina

I AM PREPARING TO SUBMIT A (CHILDREN'S BOOK) MANUSCRIPT ONLINE THROUGH A PUBLISHER'S WEBSITE.. BUT THERE'S SOMETHING ABOUT THE PROCESS THAT HAS ME UNEASY..

I FEEL ONCE IT'S SUBMITTED, IT'S THEIR'S AND NO LONGER MINE. FOR ALL I KNOW, THEY COULD REPLY SAYING THEY HAVE NO INTEREST IN THE MANUSCRIPT, BUT TURN AROUND AND PUBLISH IT (CUTTING ME OUT OF THE PROCESS).

ARE THERE STEPS I NEED TO TAKE TO PROTECT MY WORK????

I LIVE IN SOUTH CAROLINA AND THE PUBLISHING COMPANY IS BASED IN MASSACHUSSETTS..
