Legal Question in Business Law in Texas

I own a business in Texas. Can I have my employess sign a non compete contract for not only when they are not working for me but also while they are current employees? Would this contract hold up in court if one of the employees broke it?

As a Franchise Attorney I can this about noncompete contracts. Usually in-term (meaning while they are employed) noncompetes are very enforceable. Ex-term (meaning after they leave) are also enforceable if reasonable in geographic scope and scope.
