Can a company require your signature on a paid cash reciept?

Probably as they may want the signature to prove delivery of the product you are paying for. There may be other valid reasons for the signature requirement. Since they are apparently a private company they may make any reasonable or unreasonable requirement, so long as no law is violated. If you feel the request is unreasonable, your option is normally to take your business elsewhere.
As a Franchise Attorney I only want to point out the following. In addition to what the other attorney says, are you the one paying them cash or are they paying you cash? If they're the one paying you cash, it's very reasonable for them to have you acknowledge receipt of the cash. Consult with a good business or franchise attorney in your area for specific advice.
