Is a handshake a binding contract in the state of texas?

It could be, unless a specific statute requires it to be in writing; i.e. a contract for an interest in real estate must be in writing.
The problem with handshakes is proving up the agreement between the parties. It doesn't make the contract invalid, but it does make it difficult to enforce.
