We let my roomate borrow my boyfriends car earlier in the day got the keys back put in my room and left out of town. She stole his car at night and drove to Falfurrias.Stranded and destroyed the clutch to his car.We filed a police report for automotive theft but she was crying and said she'd pay for all damages. It's been a month and nothing is paid.Cops said it would be a civil court issue.Any help? We've helped her countless times with rides to/from school, to/from work, babysit her kids, etc and this is how she repays us?

You have the right to sue her (the roommate), but you'd probably end up with an uncollectible judgment.
She's a bum. Write her off. Consider it an expensive lesson that you learned about trusting people. And the next time she "needs help," tell her to go somewhere else.
