I sold a car and I want to take it back: money still owed

an employee of mine needed a 2nd car for his wife. I agreed to sell them mine. I still owed $3000.00. Every month they pay me and I make the payment.I used a legal form I got at Office depot. I put in there I could repo the car at any time, if they still owed money, if they missed a pymt by even one day. Car is still in my name. Car broke down in their possession and I paid for a new engine and the labor. They are having marital problems and his wife says she doesn,t want to pay me and could set the car on fire if she wanted to.Can I go take my car back at any time?

No you may not take the car "at any time" repossession is a self help remedy that must be exercised carefully. For example, you must not "breach the peace" when exercising it.
