I purchased a car and was the cosigner and left it in good standing but then my ex went to the dealer and bought another car without me there or my signature or consent for this second car can they legally put that second car on my credit without my consent?

No. However if there is a deficiency from your ex's trade in, you as cosigner are responsible.
