can a judgement just placed on my wife affect our marital assets? We were not married when she signed for the loan

Comunity property is subject to seizure for an unpaid debt - but only if the property is non-exempt. Chances are very good that all of your property is exempt (see chapters 41 and 42 of the Texas Property Code).

Yes, community property can be levied on for your wife's judgment.
