Legal Question in Credit and Debt Law in Texas

I paid a vet bill for my roomate for the amount of $280.00 with my credit card. Upon moving out she gave me a personal check for the amount. I cashed this check at a check cashing place because i needed the money for my move. About a month later the check cashing place is contacting me to pay the amount of the check because my roomate had put a stop payment on the check. I no longer speak to the old roomate and know trying to do so wouldnt get me anywhere. What do i do? How can someone cancel a check just because they dont want to pay it?
