Yes I received a call stating I was going to be served legal documents Friday between 3-6 and I needed to call this 855 number if this time wasn't suffecient. Is this common for a Courier to call before serving papers?

No not usually. I would suggest googling the 855 number and try to find out who it belongs to or whether it is a scam.
