Legal Question in Criminal Law in Texas
I was assaulted by my boss about a month back in the workplace, and I called the police to file a report. I wanted to have the time to think before I pressed charged, but the only problem with that is that I am afraid that because my only witness might not want to get involved. Should I still persue a lawsuit? The only other thing I might have on him is that apparently he assaulted another worker with a wine bottle. Do I have access to find out if he really did?

You have asked this question under criminal law so I will answer the relevant criminal portion. You can file charges against your boss even if you do not have another witness. Your word is sufficient. However, the longer you delay, the less likely you are going to be believed and the less likely law enforcement (particularly the DA's office) will take the charges.
As far as finding out about whether he assaulted another person, you can go to the clerk's office (which may be district / county or separate) and have them look your boss up. You will need his full name and date of birth. This will tell you if there are pending charges. If there is are no charges, you will not find anything. (Why don't you just ask the other worker?)
What lawsuit are you talking about pursuing? A civil lawsuit? If so, post that inquiry under the civil section.
