If its you're first offense ever, would it be a good idea to file nondisclosure petition with the help of an online legal document service and represent yourself. It was Class B misdemeanor theft and deferred adjudication in Texas.

No. It is not the form that is the issue. You need a lawyer to give you advice / information on whom to include in the order (which can't be determined until the lawyer delves into the case a bit and figures it out) and you need a mouthpiece. Many judges are reluctant to grant nondisclosure and especially not immediately upon eligibility. Your money is better spent on hiring a lawyer. Shop around. There are many good lawyers who charge decent fees that are affordable.
